Sourdough Pain de compagne. This rustic french bread uses a small amount of whole grain flour in a predominantly white flour bread. Typically only 1/3 -1/2 cup of any combination of rye, wheat or spelt flour is used. Sourdough yeast slowly works on bringing out the flavor and sweetness of the grain making a delicious loaf of bread.
